The Chef of the Hotel AQUARIUS SPA*****
He is constantly looking for inspiration, perfecting his art, fantastically composing flavors. His dishes combine what is most important in a good, healthy cuisine: nutritional balance, rich vitamins, flavors that we know from childhood and the idea of Slow Food. The dishes are based on fresh, seasonal and natural products, coming from local farmers and breeders. The great asset of his cuisine is the dishes made with fresh fish, which are supplied from the port of Kołobrzeg.
Passion
The creator of good taste with many years of experience, Grzegorz Nowicki embraces and cultivates what is the best and the healthiest in Polish cuisine. He is a perfectionist passionate about taste. He says you can’t rush good food; preparing refined food requires time and patience. He prefers traditional, long preparation of meats marinated for several hours. Grzegorz believes in combining excellent Polish cuisine and modern methods of cooking in delivering superb dishes (for example sous vide).

It is through the search for the highest quality organic ingredients and the use of them in dishes at our “Horyzont” restaurant that, as one of few in Poland, our hotel received the prestigious Slow Food Poland certificate, confirming the high quality of our chef’s dishes.
Slow Food promotes the idea of a conscious, local and ecological approach to food, supporting farmers and producers who act in harmony with nature. This certification ensures that products come from sustainable sources and that production processes are environmentally friendly.
